This low carb chicken recipe is one of those classic chicken recipes that I am sure you’ve had at some point in your life. My mom, for example, used to make it with mayonnaise only.

Low Carb Greek Yoghurt Chicken

Ingredients

  • oil spray
  • 5 oz. plain greek yogurt
  • 2 tbsp mayonnaise
  • 1/2 cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1.5 lb. chicken tenders (whole) or chicken breasts (cut in quarters)
  • Parsley (chopped, for garnish)

Instructions

  • Preheat oven to 375°F. Lightly coat a 12 inch oven proof pan or 9×9 baking dish with nonstick oil spray and set aside.
  • In a medium bowl, mix together the greek yogurt, mayonnaise, Parmesan cheese, garlic powder, salt and pepper.
  • Add chicken into the bowl with yogurt mixture and coat the mixture all over the chicken.
  • Move chicken to a baking dish (or oven proof pan). Chicken should be thinly coated with the yogurt mixture. Don't put too much or any additional mixture leftover.
  • Bake for 25-30 minutes, or until the chicken is cooked through.
  • Turn the oven to broil and place the pan under the broiler for 2-3 minutes until lightly browned on top.
  • Optional: garnish with chopped parsley.

    Made this tonight for my wife. Used a vanilla Greek yogurt and it was amazing. Served with a Greek yogurt cucumber salad. Definitely will serve again with guests. Thank You.

    Made this for my family tonight, along with a side of steamed broccoli. Sprinkled a little parmesean over the chicken and the broccoli. Delicious and healthy!

    This sounds so good, however your nutrients are WAY off. You state 4 servings, just the chicken, 6oz, would have 54 g of protein and 282 calories. I want to make this, but I’ll need to enter everything into a calories calculator before I see whether or not I want to try it.

      I think the information is correct now – I just checked and it states 8 g of protein which makes sense

    I made this tonight and it was amazing!! Everyone loved it! I made it with light mayo and it turned out perfectly. The chicken was so moist (unlike most other nights Lol). Besides the substitute of light mayo I made it exactly how you wrote it. Great! Will make extra next time for lunches the next day. Thank you for the recipe! I will try more of your recipes soon.

      I didn’t flatten the chicken. What I did is use chicken tenders, which were sliced thinly.
