Bacon Stuffed Chicken Breast

The easiest and most delicious stuffed chicken recipe you will ever try. Juicy chicken breasts are stuffed with cheese, spinach and bacon.

Ingredients

  • 4 strips bacon
  • 1.5 lb. chicken breasts, thin
  • ¼ teaspoon salt and pepper, each
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 6 oz cream cheese
  • ⅓ cup feta cheese
  • 1 cup baby spinach, chopped
  • 2 tablespoon olive oil

How to Cook Bacon

  • Begin by cooking bacon in a large skillet. Cook for about 6-7 minutes until crispy. Remove onto a cutting board and chop into small pieces. Set aside
  • Drain fat from the skillet and wipe it to prepare it for the next step of cooking chicken.

How to Prepare Chicken Filling

  • In a medium bow, mix together cream cheese,, feta cheese, 1 teaspoon garlic powder chopped spinach and crumbled bacon. Set aside.

How to Cook Chicken

  • Prepare thin chicken breasts (if yours are thick - butterfly thick ones). Season the chicken with salt, pepper, garlic powder and paprika. Don't add too much salt - feta cheese and bacon will add to the saltiness.
  • Stuff seasoned chicken breasts with the filling. To do so, add filling onto a chicken filet, then roll the chicken around the stuffing. Secure the edges with the toothpicks.
  • Add olive oil to the skillet. Once hot, add chicken breasts and brown on one side for 4 to 5 minutes. Then turn and brown on the other side. Cook until the internal temperature reaches 165 F by browning on all sides.
