Ingredients
1cupsweetened shredded coconut
15ozcrush pineapple, drained
1cupmaraschino cherries, chopped and drained
½cupchopped pecans
10ozsweetened condensed milk
¼cupfresh lemon juice
1tablespoonmaraschino cherry juice
1½cupswhipped topping
1graham cracker crust
maraschino cherries, for garnish
whipped topping, for garnish
Instructions
In a large mixing bowl, stir together the coconut, pineapple, cherries, pecans, condensed milk and lemon juice.
Add the whipped topping and gently fold it into the filling.
Spoon the mixture into a graham cracker crust and use the back of a spoon to smooth it out evenly.
Decorate the top with whipped topping and cocktail cherries. Place the pie in the fridge to chill for at least 4 hours but up to overnight.
Slice and serve once chilled.
