Equipment

  • Two 9-inch round cake pans
  • Electric mixer (stand or hand mixer)
  • Wire cooling rack
  • Offset icing spatula
  • Sifter

Ingredients

Cake

  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 ½ cups coconut oil, or vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring
  • 1 teaspoon purple food coloring, or more for desired color
  • 1 teaspoon white distilled vinegar
  • 1 teaspoon vanilla extract

Cream Cheese Frosting

  • 16 oz cream cheese, 2 packages, softened
  • 12 tablespoons unsalted butter, 1 ½ sticks, room temperature
  • 1 teaspoon vanilla extract
  • 4 cups confectioners' sugar, sifted
  • 2 tablespoons cocoa powder
  • 1 teaspoon purple food coloring, or more for desired color

Decoration

  • blueberries
  • blackberries

Instructions

Cake

  • Preheat oven to 350°F. Grease and flour two 9-inch round cake pans.
  • Sift together the flour, sugar, baking soda, salt, and cocoa powder in a medium bowl.
  • In a large bowl, mix the oil, buttermilk, eggs, food coloring, vinegar, and vanilla.
  • Gradually mix the dry ingredients into the wet ingredients and blend until smooth, about 2 minutes on medium-high speed.
  • Divide the batter evenly between the prepared pans.
  • Bake for 25 to 30 minutes, until a toothpick inserted into the center comes out clean.
  • Remove the cakes from the oven and let them cool in the pans on a wire rack.
  • Once cooled enough to handle, remove the cakes from the pans and cool completely on the wire rack.
  • Once fully cooled, slice each cake horizontally to create 4 thinner layers, if desired.

Cream Cheese Frosting

  • Beat the cream cheese, butter, and vanilla together in a mixing bowl until smooth and creamy.
  • Gradually add the confectioners' sugar and cocoa powder, beating until fluffy.
  • Add the purple food coloring and blend well, adjusting with more purple, or a touch of red or blue, until you reach the color you want.
  • If the frosting feels too thin, add a little more confectioners' sugar to thicken it.
  • Frost the cooled cake layers using an offset icing spatula.
  • Decorate with berries or other toppings as desired, then slice and serve.
