Stuffed Dates with Goat Cheese and Pistachios

Ingredients

Dates and Filling

  • 24 Medjool dates
  • ½ cup goat cheese, softened
  • 2 tablespoons honey

Coating

  • ⅓ cup crushed pistachios

Instructions

  • Cut open the dates to remove the pits, being careful not to cut all the way through, then arrange them on a tray for assembling.
  • In a small bowl, use a spoon to combine the goat cheese and honey until smooth.
  • Stuff each date with 1–2 teaspoons of the goat cheese mixture, filling them slightly over the top.
  • Place the crushed pistachios in a small bowl, then roll the goat cheese portion of each date in the pistachios until evenly coated.
  • Serve and enjoy.
