Ingredients

Sauce:

  • 3 tablespoon Tamari soy sauce
  • 3 tablespoon brown sugar
  • ½ freshly squeezed lemon
  • ½ tablespoon ginger powder

Chicken:

  • 1 tablespoon Olive oil
  • 1 lb. ground chicken
  • 6 cloves garlic, minced
  • 4-6 scallions, chopped
  • ½ carrot, sliced lengthwise or chopped
  • 1 red bell pepper, chopped
  • ½ cup peanuts
  • 4-5 Romaine lettuce hearts leaves

Instructions

  • Mix ingredients listed in the Sauce section together in a small bowl and set aside.
  • Preheat large skillet on medium heat. Add olive oil and ground chicken to a large skillet and saute for about 10 minutes.
  • Stir in garlic, scallions, carrot and bell pepper and cook for 5 more minutes.
  • Add the sauce to the chicken mixture and mix well.
  • Spoon several tablespoons of the chicken mixture into the center of each lettuce leaf.
