These spooky Halloween Brownie Cakesicles are as fun to make as they are to eat. Perfect for Halloween parties, dessert tables, or trick-or-treat sweets, these spooky-cute cakesicles are easy to make and guaranteed to impress guests of all ages. Easy Halloween Treat Recipe

Halloween Brownie Cakesicles is super easy Halloween treat idea that you can make in under 1 hour. We start with a layer of melted chocolate in a cakesicle mold, fill them with rich, fudgy brownie "dough," then seal them with another layer of chocolate. Once we add sprinkles, candy eyes and more, we get mummies, ghosts, and spiderweb designs on our cakesickles.

Ingredients

  • Brownie mix: Plus required ingredients. After baking, brownies are crumbled slightly and mixed with a binder (like melted chocolate or a spoon of frosting) to shape easily into the cakesicle molds without crumbling apart.
  • Chocolate frosting: You will only need ¼ cup to bind the cakesickles. Use homemade or store bought.
  • Melting chocolate or candy melts: I used white melting chocolate to coat the outside of the brownie filling, creating the smooth, shiny shell that gives cakesicles their spooky look. Use a variety of colors: white, orange, black, green, purple.

Essential Equipment

  • Halloween sprinkles, candy eyes, mini candies
  • Cakesicle molds:
  • Popsicle sticks: So that we can hold Halloween brownie cakesickles, adding the "cakesicle" effect. You can use ice cream sticks as well.
  • Food coloring (gel-based): Turns melted chocolate into orange pumpkins, green Frankenstein faces, and purple monsters. Gel colors are best since they won't seize chocolate like liquid colors often do.

How to make Halloween Brownie Cakesicles

1. Make and crumble the brownies: Prepare and bake brownies as directed. Cool completely, then crumble into a bowl.

2. Combine frosting and brownie crumbles: Mix in ¼ cup of frosting to create a moldable dough.

3. Melt candy melts and spoon into the mold: Melt candy melts in the microwave on low heat for 20 seconds until smooth and ready to spread into each cakesicle mold. Use the back of a spoon or pastry brush to coat the bottom and sides.

4. Add brownie/frosting mixture: Press brownie/frosting mixture into each mold over the hardened chocolate layer.

5. Attach popsicle sticks and refrigerate: Insert popsicle sticks and let chocolate set (refrigerate for 10-15 minutes).

6. Seal the cakesickles with more melted chocolate: Spoon more melted chocolate over the brownie layer to completely cover and seal the cakesicle.

7. Smooth the top and refrigerate again: Smooth the top and refrigerate again until set (about 15-20 minutes).

8. Remove cakesickles out of the mold: Once fully set, gently pop the cakesicles out of the mold.

9. Decorate: Decorate how you would like, create characters, drizzle additional chocolate,  top with Halloween sprinkles, candy eyes, or themed candies.

  • 3 oz (per color) melting chocolate or candy melts (white, orange, black, green, purple) or white almond bark

  • Spoon a layer into each cakesicle mold and use the back of a spoon or pastry brush to coat the bottom and sides.
  • Insert popsicle sticks and let chocolate set (refrigerate for 10-15 minutes).
  • Press brownie mixture into each mold over the hardened chocolate layer.
  • Leave a little room at the top for sealing with chocolate.
  • Spoon more melted chocolate over the brownie layer to completely cover and seal the cakesicle.
  • Smooth the top and refrigerate again until set (about 15-20 minutes).
  • Once fully set, gently pop the cakesicles out of the mold.
  • Decorate how you would like, create characters, drizzle additional chocolate,  top with Halloween sprinkles, candy eyes, or themed candies.

Decoration Details and Ideas

Mummy: White drizzle + candy eyes

Frankenstein: Green shell, black drizzle "hair," candy eyes

How do I make coating shiny?

To make candy melts shiny, add a small amount of coconut oil or vegetable shortening during melting, which helps create a glossy surface without altering the texture too much.

Also make sure molds are clean and smooth, since any residue or scratches can dull the finish.

Can I use white chocolate?

Yes! White chocolate or candy melts are perfect for coloring with gel-based food coloring for Halloween themes.

Can these be frozen?

You can freeze them, but the chocolate may sweat when thawing. Best stored in the fridge if made in advance.

How many cakesickles does this recipe make?

This recipe makes about 24-30 cakesicles depending on the size of your mold.

Can I use store-bought brownies or fill with something else?

You can use store bought brownies, just be sure to crumble and mix with a little frosting so that the mixture holds together. You can also experiment with adding things like cookie and cream cheese mixtures, Marshmallow treats or Rice Krispie mixtures.

Tips for success

  • If chocolate is too thick, add a teaspoon of coconut oil or shortening and stir until chocolate is thin enough to work with.
  • Instead of colored melting wafers, use white almond bark and food coloring.
  • Make sure to bring the chocolate up the sides of the mold, so that it will seal properly.
  • If you don't have a mold, or you don't want to coat the mold, you can dip the cakesicle directly into the chocolate. You may have to adjust the amount of chocolate to get good coverage.
  • Candy melts are easier to work with while tempered chocolate gives a more professional finish. You can also use white almond bark.
