How to Make Salted Caramel Chocolate Brownies
1. Melt the Chocolate and Butter
Use water bath to gently heat the chocolate using a heated water bath. Use a larger container of water, which is heated. The indirect heat from the water bath helps to prevent overcooking and cracking of chocolate, making it ideal for our recipe. As a result, the chocolate and butter mixture won't get any hot spots which can occur from microwave heating and you can be certain your chocolate won't seize if heated slowly and gently!

2. Make the Brownie Batter
Now add the sugar to the melted butter and chocolate. Using an electric mixer or handheld whisk, ensures that you mix the ingredients evenly. Although the mixture will look very grainy which is fine.
OK, next add the eggs, one at a time, beating on a medium speed between each addition. Add the vanilla extract and beat until combined.
Now add the flour and cocoa powder, using a spatula gently fold the ingredients together stopping before they are combined.
And lastly, add the chopped chocolate and pretzels into the mixing bowl and fold until everything in the bowl is only just combined.

The mixture will thicken and look fudge-like.

3. Bake the Brownies
- Transfer the brownie batter into the prepared baking pan. Use a palette knife or the back of a spoon to smooth the top into an even layer.

Make Chocolate Brownies
- Preheat the oven to 350ºF.
- Line a 9"x13" baking pan with parchment paper and lightly oil the paper or spray with nonstick cooking spray. Set aside.
- To a large heatproof bowl set over a pan with an inch of simmering water (Bain Marie method) add the finely chopped chocolate and cubed butter. Allow to melt,stirring occasionally then remove from the heat.
- Add the sugar to the melted butter and chocolate.
- Use electric mixer (or whisk) to beat the ingredients on a medium speed for one minute. The mixture will look very grainy and that is fine.
- To the bowl, add the eggs, one at a time, beating on a medium speed between each addition.
- Add the vanilla extract and beat until combined. The mixture will thicken and look fudge-like.
- To the mixing bowl, add the flour and cocoa powder. Use a spatula to gently fold the ingredients together, stopping before they are combined.
- Add the chopped chocolate and pretzels into the mixing bowl and fold until everything in the bowl is only just combined. Do not over mix.
- Transfer the brownie batter into the prepared baking pan.Use a palette knife or the back of a spoon to smooth the top into an even layer.
- Bake in the middle of the preheated oven for 28 minutes or until a tooth pick inserted into the brownies comes out with a few moist crumbs clinging to it.
- Remove from the oven and leave to cool in the pan while you make the salted caramel sauce.
Make Salted Caramel Sauce
- To a saucepan set over a low heat, add the sugar. Use a rubber spatula to constantly stir the sugar as it melts. This will prevent burning.
- The sugar will form clumps (that's OK) then melt, turning into an amber-colored liquid.
- When the sugar has melted, add the butter. Stir until the butter has completely melted and is combined with the sugar.
- Slowly drizzle in the cream, the caramel will bubble up so take care and stand back in case it splashes.
- Allow the caramel to boil for about 30 seconds to 1 minute to thicken slightly.
- Remove from the heat and immediately add the salt and stir it in.
- Transfer the caramel sauce to a jar or jug and leave to cool during which time it will thicken slightly.
Assembly
- When the brownies have cooled, pour over the cooled salted caramel sauce and arrange the pretzels on top.(Note:You may find it easier to remove the brownies from the baking pan and slice them before pouring the caramel over them.)

Think of cold, hard butter. It's impossible to cream cold butter into a soft consistency. Same goes for eggs-they add much more volume to the batter when they're at room temperature.
- Use real chocolate, not just cocoa powder.
Melting actual dark chocolate (70% cacao or higher) into your butter creates a denser, richer brownie than cocoa powder alone. Real chocolate adds fat and structure that keeps the center fudgy all the way through. - Don't overbeat the eggs.
Once the eggs go in, mix just until combined. Over-beating incorporates air, which lifts the batter and creates a cakey texture. Stir by hand rather than a mixer from this point on. - Underbake by a few minutes - on purpose.
When baking, it's better to take the brownies out of the oven a little early than to leave them in too long. To check, poke a toothpick in the middle - if it comes out with a few crumbs stuck, they're done! - Cool completely before adding caramel.
