Raspberry and Feta Phyllo Galette with Hot Honey is bursting with fresh raspberries, sweet cream cheese and salty feta. Made using flakey, buttery, puff phyllo pastry, it's delicious and easy to make.

Flaky, crispy phyllo dough is filled with with cream cheese and feta cheese mixture, and then topped with raspberries! Serve it hot with a dollop of vanilla ice cream.

Sweet and tart raspberry feta galette is one of the easiest ways to make a pie. And phyllo dough is one of the easiest ways to make pie dough. Since I am a fan of hot honey, I use that to add a little heat to the berries and I find that it complements the saltiness of the feta and the juicy sweetness of the raspberries perfectly!

Raspberry Galette is one of those easy recipes that everyone loves! It's essentially a free form tart that is like a simpler version of classic berry pies. Serve it up with cool toppings like ice cream, whipped cream or even lemon curd!

There's really no better time of year to make this delicious dessert than in the summer. Raspberry galette takes advantage of all the natural flavors for an unbelievably delicious treat in the end.

Ingredients

  • Fresh raspberries
  • Cream cheese
  • Feta cheese
  • Hot honey
  • Phyllo dough
  • Butter

How to make Raspberry Feta Galette

Although you can make your own dough from scratch if you want to, it's a lot less work to use store-bought refrigerated phyllo pastry dough for a super simple and delicious recipe. Here are the easy steps:

Prepare phyllo dough: Melt the butter in a small glass dish, then place one sheet of phyllo dough on a pizza pan or a parchment covered baking sheet. Use a basting brush to brush a small amount of butter over the sheet of dough, place another sheet rotated slightly from the original sheet. Brush with butter. Repeat this, moving in a circular fashion around the pan until the entire pan is covered, leaving 2 inches of excess dough around the edges.

Make feta cream cheese filling: In a glass mixing bowl, combine the feta and cream cheese to form a thick mixture. Use a spoon or spatula to carefully spread the cheese mixture over the layered phyllo dough crust so that it is in an even layer.

Add raspberries: Add the raspberries to the center of the galette on top of the cheese layer. Drizzle the hot honey over the filling.

Fold phyllo dough: Fold the excess dough over the galette so that there is a 2-inch crust partially covering the filling.

Bake the galette: Cook at 350 degrees for 20-25 minutes until the cheese has melted, the berries have softened, and the crust is flaky and golden brown.

Tips for making this recipe

  • Thaw overnight: To thaw the phyllo dough properly, let it sit in its unopened package in the refrigerator overnight.
  • Use a fork the gently mash the cooked raspberries on top of the galette to create a smooth topping.
  • Let the galette sit for a few minutes. Just before serving, top with fresh mint leaves and a scoop of vanilla ice cream!
  • Phyllo dough: Make sure you remember to line your baking sheet with parchment paper before rolling the pie crust out onto it. Spread the raspberry filling into a somewhat even layer, but make sure you leave a 2-inch border of phyllo dough. You don't have to worry about making things too even when you fold up the dough. The beautiful raspberries will make the dessert shine either way.

Variations on Raspberry Galette

  • Flavors: There are plenty of different flavors you can add to the fruit filling by mixing in lemon zest, lemon juice, or orange juice.
  • More berries: Try mixing in some fresh blackberries, raspberries, or cherries. Slice the fresh berries to make them about the same size as raspberries.
  • Make it boozy: If you want to add a splash of bourbon to the Raspberry Galette, your galette will just be a bit less sweet and a lot more boozy with caramel flavors! My other favorite is with dark rum which is sweeter than the bourbon.
  • Decorate the top: Brush on an egg wash and sprinkle with coarse sugar for a beautiful, sparkling Raspberry Feta Galette.

How to store Raspberry Galette

  • Room temperature: If you cover the Raspberry Feta Galette in plastic wrap or put it in an airtight container, it can stay good at room temperature for 2 days.
  • Refrigerate: To keep it for 4-5 days, wrap it up and put it in the fridge.
  • Freeze: You can also freeze Raspberry Feta Galette for up to 6 months. Just make sure that it's tightly sealed.
