Although you can make your own dough from scratch if you want to, it's a lot less work to use store-bought refrigerated phyllo pastry dough for a super simple and delicious recipe. Here are the easy steps:
Prepare phyllo dough: Melt the butter in a small glass dish, then place one sheet of phyllo dough on a pizza pan or a parchment covered baking sheet. Use a basting brush to brush a small amount of butter over the sheet of dough, place another sheet rotated slightly from the original sheet. Brush with butter. Repeat this, moving in a circular fashion around the pan until the entire pan is covered, leaving 2 inches of excess dough around the edges.

Make feta cream cheese filling: In a glass mixing bowl, combine the feta and cream cheese to form a thick mixture. Use a spoon or spatula to carefully spread the cheese mixture over the layered phyllo dough crust so that it is in an even layer.

Add raspberries: Add the raspberries to the center of the galette on top of the cheese layer. Drizzle the hot honey over the filling.

Fold phyllo dough: Fold the excess dough over the galette so that there is a 2-inch crust partially covering the filling.
