Well, this No Bake Blackberry Lime Delight combines sweet and tart summer flavors in a buttery Golden Oreo crust. Made with cream cheese, vanilla instant pudding, Jell-O lime gelatin, fresh lime juice and blackberry pie filling.

With lots of blackberries running through the center of this cake, this blackberry lime delight is going to be the dessert you'll keep making for years and years.
What is blackberry lime delight?
Blackberry lime delight is a crowd-pleasing dessert made with layers of fluffy vanilla pudding, lime gelatin and cream cheese mixed with the blackberries and lime juice. And if that wasn't enough, everything sits on butter golden Oreo crust. Unbelievably good.

Blackberry Lime Delight Ingredients
- Golden Oreos: Crushed to crumbs and then combined with butter to make the crust.
- Instant pudding mix: Use Jell-O instant vanilla pudding mix. Lime pudding mix will also work, as long as it's "instant", not "cook & serve". Also, pay attention to the size of the box. This recipe calls for instant pudding mix that is 5.1 oz box.
- Lime gelatin: Jell-O Sugar-Free Gelatin Dessert or Jello Lime
- Milk: You can use any type of milk in this recipe but I do find the texture is best when I use whole milk or half and half.
- Butter: Salted or unsalted.
- Sugar: White or granulated.
- Blackberry pie filling: I used Oregon specialty fruit Blackberry pie filling 21 oz. can, you can also use blueberry pie filling instead.
- Lime juice: freshly squeezed.

How to make Blackberry Lime Delight
Crush the Oreos to make golden Oreo crust, then add fresh halved blackberries. Cover them up with the lime pudding/cream cheese layer. Add blackberry (or blueberry) pie filling on top and top with the whipped cream, fresh blackberries and Oreo crumbs.
Crush Oreos and make crust
Place Oreo cookies in a food processor (or smash in a sealed bag) to make fine crumbs. In a small bowl mix crumbs with melted butter until evenly moistened.



Press crumbs into bottom of a 9 x 9 dish (or 9 x 13 if you desire a thinner delight), and let crust set up in freezer while you work on the next layer. Use the bottom of measuring cup to create the crust.


Add sliced blackberries
Slice blackberries into halves, and line evenly across bottom of crust.


Lime Cream Layer
In a large mixing bowl, beat cream cheese and sugar until light and fluffy. Add lime juice, lime zest, and whole milk, and mix thoroughly. Next add dry vanilla pudding mix and lime Jell-O last, beat until thoroughly mixed.
Pour lime cream mixture on top of the blackberry layer and spread gently to form an even layer.
Place in freezer to set while you work on the next layer.


Blackberry Pie Filling
When the lime cream layer is set, carefully drop dollops of blackberry pie filling on top, and then gently spread into an even layer with a spoon or spatula.
TIP: If pie filling is too thin, separate off liquid, stir in 2 tablespoons of cornstarch into liquid, and bring to boil until thickened. Mix berries back in. Allow the mixture to cool before pouring onto lime cream layer.

Freeze and add whipped topping
Place in freezer to set for 25 minutes. Spoon thawed whipped topping onto the pie filling layer, and spread evenly with a spoon or spatula.

Garnish
Top the flight with with reserved cookie crust crumbs, fresh blackberries and lime zest.

Set in the fridge
Allow dessert to set up in fridge for at least 3 hours, preferably overnight. You can speed up set up time by placing in freezer for 2 hours. Keep refrigerated until ready to serve.


Blackberry Lime Delight - No Bake
Ingredients
Oreo Crust
- 24 golden Oreo cookies (crumbs divided)
- ½ cup unsalted butter (melted)
- 1½ cups blackberries halved
Lime Cream Layer
- 16 oz cream cheese (2 packages),(room temperature)
- 1 cup granulated sugar
- ⅓ cup lime juice
- zest of 1 lime
- 1½ cups whole milk
- 5.1 oz box instant vanilla pudding mix
- 3 tablespoon Lime Jell-o
Blackberry Pie Filling
- 21 oz can blueberry pie filling
Whipped Topping
- 8 oz (tub) Cool whip (thawed)
- ¾ cup fresh blackberries to decorate
- zest of 1 lime to garnish

If You're Making Blackberry Lime Delight, a Few Tips
- Let it set up overnight. While the dessert is certainly sliceable after 3 hours in the refrigerator, letting it set up overnight makes the slices more sturdy.
- Use a warm, clean knife for slicing. To showcase the impressive layers of this dessert, run a long, sharp knife under very hot water, then dry before slicing. Make sure to wipe the knife clean after every cut.

Storage, freezing, making ahead
- Refrigerate: Blackberry Lime Delight can be refrigerated for up to 4 days. Store leftovers in an airtight container.
- Can You Freeze This? Yes. But since this delight has fresh blackberries, I don't recommended to freeze for longer than 1 month. Once thawed beyond that, the texture might differ.
- Make-Ahead Tips: Assemble a day ahead or a few hours ahead, and refrigerate.
