- 2 cups graham cracker crumbs
- ⅔ cups butter melted
- ¼ cups white sugar
Blueberry Layer
- 2 ½ cups blueberries fresh of frozen
- 2 tablespoon lemon juice
- 1 cup white sugar
- 2 tablespoon corn starch
Strawberry Layer
- 3 cups strawberries fresh, diced
- 1 tablespoon lemon juice
- ½ cup light brown sugar
- 2 ½ tablespoon corn starch
Cheesecake Layer
- 16 oz cream cheese 2 blocks, at room temperature
- ½ cup butter at room temperature
- 1 ½ cups powdered sugar
- 2 teaspoon vanilla extract
- 12 oz Cool Whip 1 large tub
Topping
- 1 cup whipped cream piped
- ½ cup blueberries and strawberries (sliced)
Instructions
Graham Cracker Crust
- In a 9x13 cake pan or glass baking dish, add your graham cracker crumbs and sugar; and whisk together with a fork. Pour melted butter over the crumbs and mix in with the fork and when it's all mixed -press the crust down evenly into the pan with a flat side of a measuring cup.
Blueberry Layer
- Ina medium saucepan, add blueberries, lemon juice and sugar. Heat the pan on medium-low and cook down the fruit for about 20-30 minutes until soft and most of its liquid is absorbed. Turn the heat down to low.
- Add a squirt of lemon juice to the cornstarch, enough to make a slurry (liquid cornstarch) and slowly add to the pan and stir in. Allow to cook and thicken for another 2-3 minutes. If it doesn't seem to be thickening to the consistency you'd like, add more cornstarch slurry, about a tablespoon at a time.
Strawberry Layer
- At the same time you can cook your strawberries in a medium saucepan. Add the strawberries, lemon juice and brown sugar and repeat the steps of the blueberries until it's the consistency you prefer as well (basically use more corn starch).Allow both berry fillings to cool down to at least room temperature.
Cream Cheese Mixture
- In a large mixing bowl add your room temperature cream cheese and butter; and cream them together with a hand mixer or in a stand mixer. Add your powdered sugar and vanilla and start mixing on low until the sugar is incorporated and then turn your mixer up to medium low and mix until smooth.
- With a spoon or spatula, fold your whipped cream into the cream cheese mixture, being careful not to deflate the cream. Make sure the mixture is easy to spread.
Final Assembly
- Assemble your layered dessert by starting with ⅓ of the cream cheese mixture - spread it over the graham cracker base. Next spread your cooled strawberry filling using a spatula.
- Add another ⅓ amount of your cream cheese mixture over the strawberry layer, carefully with a clean spatula. Now add the blueberry layer being careful with the dark blueberry mixture - use a clean spatula again.
