Queens summers get brutally hot and humid, and there's no marine layer coming to save me - so even though I love to bake, the oven stays off more often than not from June through August. Instead, I opt for no-bake desserts that keep both the kitchen and me cool. This collection has something for every craving, including creamy no-bake cheesecakes, fruity pudding pies piled with fresh berries, and retro favorites that taste like summer without ever touching a heating element. They're proof that some of the best summer desserts never see the inside of an oven.

Here are 10 of my favorite no-bake pies for beating the heat this summer.

1. No Bake Vanilla Pudding Pie with Blueberries and Strawberries
This one's a go-to when berries are at their peak. French vanilla pudding and cream cheese fold together into a tangy-sweet filling, all piled onto a graham crust and topped with fresh strawberries, blueberries, and blackberries. Five ingredients, under 20 minutes of prep, and it looks like you fussed over it all day. Get the recipe →

2. No-Bake Blueberry Cheesecake Pie
Creamy, no oven, and ready in about 20 minutes - this is the pie to make when blueberries are overflowing at the farmers market. Get the recipe →

3. No Bake Cherry Pie
A classic for a reason. Sweet-tart cherry topping over a rich, no-bake cheesecake filling. Get the recipe →

4. No Bake Pistachio Pie with Salted Pistachio Crust
The salted pistachio crust makes this one stand out - nutty, buttery, and a nice contrast to the creamy filling. Get the recipe →

5. No Bake Root Beer Float Pie
Nostalgic and genuinely fun - this one tastes like the drive-in classic, no soda fountain required. Get the recipe →

6. Blackberry Lime Delight (No Bake)
Bright, tangy, and a little unexpected - the lime keeps this one from tasting too sweet, and it's a great way to use up summer blackberries. Get the recipe →

7. No Bake Lemon Pudding Cream Pie (5 Ingredients!)
Same easy pudding-pie method as the vanilla version above, but with a citrusy lemon twist. Great for anyone who wants dessert to taste "light" even when it's rich. Get the recipe →

8. No-Bake Peanut Butter Pie
For the peanut butter lovers - this one's dense, creamy, and deeply satisfying without ever touching the oven. Get the recipe →

9. No Bake Millionaire Pie
This Millionaire Pie is a creamy No-Bake Tropical Dessert filled with pineapple, coconut, maraschino cherries, and pecans in a buttery graham cracker crust. Get the recipe →

10. No Bake Strawberry Pie
Strawberries, cream - this one's basically a no-bake take on the classic berry cheesecake, and it's a showstopper for summer parties. Get the recipe →

FAQ

Can I make no-bake pies ahead for a party?
Yes - most of these are best made a day ahead so they have time to fully set in the fridge. Add any fresh fruit topping just before serving to keep it looking vibrant.

Do no-bake pies need to stay refrigerated at a picnic or potluck?
Yes, they hold up for about an hour out of the fridge if kept out of direct sun, but for longer events, keep them on ice or in a cooler.
