In a large mixing bowl, beat the butter and brown sugar until the sugar mixture starts to lighten in color. Add the eggs, orange zest, and vanilla extract, mixing well. Mix in the flour mixture just until combined.

Ingredients

  • 1½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon
  • 1 cup unsalted butter melted
  • 1½ cups brown sugar
  • 2 large eggs
  • ½ tbsp orange zest
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips
  • ½ cup dried cranberries

Cream Cheese Frosting

  • 8 oz cream cheese room temperature
  • 1½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup dried cranberries chopped
  • ½ cup white chocolate chips

Instructions

  • Preheat the oven to 350°F and line a 9x13-inch baking dish with parchment paper.
  • Whisk together the flour, salt, and cinnamon in a medium mixing bowl.
  • In a large mixing bowl, beat the butter and brown sugar until the sugar mixture starts to lighten in color. Add the eggs, orange zest, and vanilla extract, mixing well. Mix in the flour mixture just until combined. Gently fold in the white chocolate chips and cranberries. Spread the batter evenly into the prepared baking pan.
  • Bake for 25-30 minutes, or until the edges turn golden brown. Allow the bars to cool completely.
  • In your mixer bowl, beat the cream cheese, powdered sugar, and vanilla extract until light and fluffy. 
  • Spread the frosting over the cooled bars. Sprinkle the cranberries on top.
  • In a small microwave-safe bowl, melt the white chocolate in 30-second intervals, stirring in between each one. Transfer the melted white chocolate to a Ziploc bag, cut off the corner, and drizzle it over the frosting.

  • Orange extract can be used instead of orange zest - use 1 teaspoon/
  • Vanilla bean paste can be substituted for vanilla extract. It is more concentrated, so you will need to use only half of the amount called for. It will also add small black specks to your dough, which are a natural part of the vanilla bean. 
  • The full-fat version is the best choice, but a low-fat cream cheese will still work. The full-fat variety holds up better to the sweetness and adds extra creaminess to the icing. 
  • White Chocolate Options: Use either chips, melting wafers, or chopped white baking chocolate; brands like Ghirardelli offer a richer, more authentic flavor.
