When I come home with a family pack of ground beef, I do not want five identical dinners waiting for me. I want one cheesy skillet night, one pot of sauce for pasta, something with vegetables, something fast enough for a tired Tuesday, and at least one dinner that can become lunch the next day.

🍔 Homemade Hamburger Helper
A pound of 80/20 ground beef is right at home here. Browned beef, macaroni, broth, milk, Monterey Jack, and cream cheese make a creamy one-skillet dinner with no box involved. This is the one I make when I want comfort food but do not want a pile of dishes.

🍝 Beef Bolognese with Red Wine and Parmesan
This one takes longer, but most of the time belongs to the pot, not you. Ground beef cooks with finely diced onion, carrot, celery, tomato paste, red wine, tomatoes, and Parmesan. Make enough to freeze half, then enjoy the rare pleasure of finding dinner already made on another weeknight.

🌶️ Southwest Beef Cavatappi Skillet
This is where I use 85/15 ground beef. The cavatappi catches the smoky roasted red pepper crema, while poblanos, sour cream, cheese, and beef make the skillet feel far more exciting than regular weeknight pasta.

🥢 Weeknight Ramen Noodle Stir Fry with From-Scratch Sauce
Lean ground beef works well here because the pan already has noodles, crisp vegetables, and a quick sauce with soy sauce, brown sugar, vinegar, Sriracha, and garlic. It is the dinner for the nights when you have ramen in the pantry but do not want to use the flavor packet.

🫑 Mexican Ground Beef and Rice Skillet
Ground beef, rice, beans, corn, bell peppers, salsa, taco seasoning, and cheese all cook into one generous pan. I use leaner beef for this meal because it keeps the rice and salsa mixture from becoming greasy. Serve it with lime wedges, avocado, tortilla chips, or warm tortillas.

Bonus line
If I have one more pound in the freezer, I use it for Creamy Beef Pasta with Spinach and Mushrooms: shells, marinara, cream, mushrooms, spinach, and cheese make a completely different kind of pasta night.

The best thing about a family pack is not that it gives you more ground beef. It gives you fewer evenings spent staring into the refrigerator wondering what that package is supposed to become.
