I always found Balsamic vinegar is very much like wines and Olive oils – there is a crazy spectrum of layers of flavor depending on the quality/brand. Did you know that it’s pretty common in culinary schools to introduce balsamic to the students by making up a quick mixture of strawberries, balsamic vinegar, and cracked black pepper?

Strawberries
If you are using medium or large strawberries, cut them in half lengthwise, if you are using small strawberries, leave them whole.
Mini mozzarella cheese balls
Not too big, not too small, but just right. These are called Perlini, or pearl-like balls of mozzarella. They are extra-small and extra easy to eat, especially when sitting next to the juicy strawberry and bathing in balsamic reduction.

You will need 6-inch skewer sticks and a large tray or board.
Storage
Store the strawberry caprese skewers in an airtight container or Ziplock bag in the refrigerator for up to 5 days, and serve chilled.
Can I make them ahead?
Yes, you can make the strawberry caprese skewers up to 2 days ahead of time, just assemble them as directed but leave out the step of adding balsamic glaze until you are ready to serve them, otherwise the strawberries will get too soggy.
Fun variations and substitutions
In place of fresh mozzarella pearls, you can also use another type of cubed white cheese, such as provolone or regular mozzarella. You can also use a light vinaigrette instead of the balsamic glaze, or leave out the glaze altogether for a lighter flavor.

Strawberry Caprese Skewers
Equipment
- A large board or a cookie sheet
- Bowls

Ingredients
- 7 strawberries, medium, cut in half lengthwise
- 28 Mozzarella pearls
- ½ cup basil leaves, fresh
- ¼ cup balsamic glaze
Instructions
- Set out 14 skewer sticks on a tray or cutting board to start assembling the skewers.
- First add ½ of a strawberry to the end of the skewer, with the cut-side facing downwards, then fold a 1 or 2 leaves of basil in quarters to add next to the strawberries.
- Then add 1 mozzarella pearl to the skewer, followed by another leaf of basil folded in quarters.
- Next add 1 more mozzarella pearl, 1 basil leaf folded and quarters, and 1 halved strawberry so that there are 2 strawberry halves, 3 basil leaves, and 2 mozzarella pearls on the skewer. Repeat until all of the skewers are packed with the toppings.
- With the skewers set out on a tray or parchment paper, drizzle the balsamic glaze in a zig-zag pattern so that each skewer is lightly striped with glaze and serve.
