This Carrot Cake Loaf with Cream Cheese Frosting is everything a great carrot cake should be - tender, warmly spiced with cinnamon and nutmeg, packed with freshly grated carrots, and topped with a thick, pourable cream cheese frosting that sets into a soft glaze. The flour is sifted twice, which sounds fussy but takes thirty seconds and is the single reason this loaf is genuinely fluffy instead of dense.

Carrot Cake Loaf with Cream Cheese Frosting

Most carrot cake loaf recipes are just dense quick bread with a carrot in the name. This one is different. Sifting the flour twice aerates the starches before they ever touch the wet ingredients - the result is a texture that's noticeably lighter and more cake-like than a standard loaf, without any additional leavening.

Fresh-grated carrots are non-negotiable here: pre-shredded bag carrots are too dry, too thick, and contribute almost no moisture to the batter. Both brown and granulated sugar go into the batter - brown sugar for moisture and depth, white sugar for structure and a slightly crispier edge.

The cream cheese frosting is pourable at room temperature and sets into a thick, tangy glaze as the loaf cools - no piping bag, no offset spatula, no effort. This is the carrot cake you make for Easter brunch, a spring afternoon, or any time you want a full carrot cake experience without baking multiple layers.

It's the carrot cake you make for Easter brunch alongside my Easter Lemon Curd Cake - or any spring morning that calls for something special with coffee.

Why You'll Love This Recipe

Carrot cake is one of those rare cakes that doesn't need its frosting to carry it. With every other cake it's like eating air with frosting on it; while carrot cake isn't carried by just the frosting. It's made with carrots but you do not taste them, you do not feel them, you do not see them. The carrot in carrot cake loaf does not add or remove anything from the cake experience. All you taste is the cake, the cream cheese frosting, the cinnamon, nutmeg and pecans you've added to the inside. And it is magical.

And the carrots? You won't taste them, see them, or feel them. They don't add a vegetable flavor and they don't take anything away from the cake experience. What they do - invisibly - is keep every slice tender, moist, and substantial in a way that a carrot-free spice cake simply isn't.

Carrot Cake Loaf Ingredients

For the Loaf

  • Carrots: When shopping for carrots, go for young carrots or carrots with the stems and leaves still attached to them. The kind that is usually found in the organic section. The flavor difference as well as juiciness of good quality carrot is immensely better with those compared to the gigantic cheaper carrots in the store.
  • Pecans: I personally prefer toasted pecans to walnuts in my carrot cake loaf. Walnuts are just too basic.
  • Cinnamon and nutmeg: Those are the classic spices for a traditional carrot cake recipe, I also like to use ginger, cloves and all spice.
  • Cream cheese: Always, always choose full fat cream cheese for the icing.
  • Sugar: Granulated and Brown sugar
  • Dry ingredients: all-purpose flour, baking powder, salt,
  • Vegetable oil: Sometimes called salad oil. I use mostly canola or sunflower oil. I use both all the time, without issue.
  • Vanilla Extract: Without vanilla, there will be very little flavor, but it won't hurt the texture of what you bake.

For the Cream Cheese Frosting

  • Cream Cheese: Use room temperature full fat cream cheese. If cream cheese frosting is your thing, these Pumpkin Cookies with Cream Cheese Frosting uses the same frosting method and is just as effortless to pour.
  • Whole Milk
  • Powdered Sugar
  • Vanilla

How to Prepare Loaf Pan

I used 9x5 inch loaf pan. Make sure to greasing it before adding parchment paper, and then grease parchment lining. Allow the parchment to overhang a little bit so that the loaf cake will easily come out by the flaps.

How to Make Carrot Cake Loaf

1. Sift and Prep Dry Ingredients

Start by sifting your dry ingredients twice - not once. I whisk the flour, baking soda, salt, cinnamon, and nutmeg together, sift the entire mixture into a bowl, then sift it again. It takes an extra 30 seconds and it's the entire reason this loaf is fluffy instead of dense. Don't skip it.

The same double-sift technique applies to my Easy Strawberry Banana Bread- it's the reason both loaves bake up noticeably lighter than most recipes you'll find.

2. Mix the Wet Ingredients and Add Dry Ingredients

I beat the eggs, both sugars, oil, and vanilla together until smooth, then switch to a rubber spatula the moment the dry ingredients go in.

Do not over mix as you will end up with a dense cake.

3. Fold in Carrots and Pecans

Gently fold in the shredded carrots into the batter until just combined.

Grate your carrots fresh, right before mixing. I use the fine side of a box grater. Fresh-grated carrots are moist, tender, and fold into the batter evenly. Store-bought pre-shredded carrots are too thick and too dry - they contribute almost no moisture and sit in the loaf like wood chips.

4. Bake and Cool

Bake at 350°F for 50 to 55 minutes - but start checking at 45. Every oven runs differently. I test with a toothpick inserted into the center: a few moist crumbs are perfect; wet batter means it needs more time; bone dry means you've gone too far. Pull it the moment those crumbs appear.

Cool completely before frosting - no exceptions. I let the loaf cool in the pan for 15 minutes, then transfer to a wire rack for at least 45 minutes more.

How to Make Cream Cheese Frosting

1. Whip Cream Cheese

Beat the cream cheese until completely smooth before adding anything else - any lumps at this stage will still be lumps in the finished frosting. Add the powdered sugar, milk, and vanilla and beat until thick, glossy, and falling in a slow, heavy ribbon from the beater. If it's too thick, add milk one teaspoon at a time - the window between too thin and too thick is narrow, so go slowly.

Don't treat cream cheese the way you treat butter: The one pro tip I have is to not whip the cream cheese more than you have to to get it mixed in, and ideally add it last. The more you whip it the more water comes out.

2. Spread Cream Cheese Frosting over the Loaf

Spread over the fully cooled loaf with a spatula across the loaf motions - that's what gives it a clean, bakery-style drape. For a firmer set, refrigerate for 20 minutes before slicing.

3. Toast Pecans and Sprinkle on Top

Chop and toast the pecans in the non-stick skillet.

US Customary - Metric

Instructions

  • Preheat the oven to 350°F (175°C).
  • Prepare a 9x5 inch loaf pan by greasing well and then parchment lining. Allow the parchment to overhang a little bit so that the loaf cake will easily come out by the flaps.

Make the Batter

  • Mix dry ingredients: Sift the flour, baking powder, cinnamon, nutmeg and salt into a medium sized mixing bowl. Sift the ingredients again.
Mix wet ingredients: In a second larger mixing bowl, whisk the vegetable oil, brown sugar, granulated sugar, eggs and vanilla extract together until it’s a uniform color and consistency.
  • Pour half of the dry ingredients into the wet and gently combine by hand (avoid a mixer). Then add the rest of the dry into the wet. Do not over mix as you will end up with a dense cake.

Fold in Carrots

  • Gently fold in the shredded carrots into the batter until just combined.

Bake

  • Pour the batter into the prepared loaf pan and smooth out until it is level.
  • Bake the loaf cake for 38-42 minutes. Poke a toothpick in the center of the cake, if it comes out clean or mostly clean, then it is ready.
  • Allow the cake to slightly cool in the pan for 5-10 minutes. Then remove and cool completely on a wire rack.

Make the Cream Cheese Frosting

  • Prepare the cream cheese icing by creaming the cream cheese with a mixer.
  • Add in one cup of the powdered sugar, milk and vanilla extract and mix until combined. Add in the second cup of powdered sugar and mix again.
  • Add in one cup of the powdered sugar, milk and vanilla extract and mix until combined. Optional: Add in the second cup of powdered sugar and mix again.
  • The icing should be the consistency of a thick glue.

Frost the Loaf

  • Once the loaf has cooled completely, top with the icing.
  • Toast the pecans for a couple minutes in a skillet to release more nutty flavor.
  • Add the chopped pecans on top of the icing. Slice and enjoy.

Notes

  • To make it dairy free: You can use coconut milk. You can also try a dairy-free cream cheese for the icing as well.
  • To reduce sugar: Adjust the sugar according to your sweet preferences. You can use coconut sugar, but the results and cake color will vary a little.
  • Feel free to use any olive  oil you like. You can also use coconut oil, but it will give the cake a hint of coconut flavor.

Tips for a Moist, Fluffy Carrot Cake Loaf Every Time

Use oil, not butter. I know butter sounds richer, but oil is what keeps this loaf moist for days. Butter is about 20% water - when it bakes off, it takes moisture with it. Oil is 100% fat and stays liquid at room temperature, which means the crumb stays tender on day three just as it was on day one.

Use both brown and granulated sugar - don't substitute all of one for the other. Brown sugar pulls moisture from the air and holds it in the crumb; white sugar gives the loaf structure and helps the edges set with a slightly crisp crust. I've tested this with all brown sugar. The loaf was wetter, denser, and never quite held its shape when sliced. The combination is deliberate.

Don't squeeze the moisture out of your carrots. Some recipes tell you to pat the grated carrots dry. I don't. That moisture is exactly what keeps this loaf from drying out during the long bake time. Grate them, measure them, fold them straight in.

Room temperature eggs, not cold. Cold eggs don't emulsify cleanly into oil-based batters - they create a slightly broken, uneven mixture that bakes unevenly. I pull my eggs from the fridge 30 minutes before I start. A fully emulsified batter traps air more efficiently and produces a more uniform, tender texture throughout.

Don't open the oven door before the 45-minute mark. I've done it. The loaf sank in the center and never fully recovered. The structure of a quick bread sets gradually - early heat loss collapses the air bubbles before the flour proteins have a chance to set around them. Set a timer and leave it alone.

Let the cream cheese frosting cool slightly before pouring. I make the frosting while the loaf is on the wire rack, then let it sit for 5 minutes before pouring. Slightly thickened frosting clings to the top of the loaf instead of running down the sides - you get that thick, glossy glaze rather than a thin drizzle pooled around the base.

Can I use pre-shredded carrots from the store?

I don't recommend it. Bagged pre-shredded carrots are cut too thick, too dry, and have lost most of their natural moisture by the time they reach you. They sit in the loaf as coarse, fibrous pieces rather than melting into the batter the way freshly grated carrots do.

Fresh-grated on the fine side of a box grater takes five minutes and is the single biggest factor in how moist this loaf turns out.

Can I make this carrot cake loaf ahead of time?

Yes - and it's actually better on day two. The spices deepen overnight and the crumb softens as the carrots continue to release moisture into the loaf. Bake it the day before, cool completely, frost it, and store loosely covered at room temperature. If your kitchen runs warm, refrigerate it covered and bring to room temperature for 30 minutes before serving.

Can I freeze carrot cake loaf?

Yes, but freeze it unfrosted. Wrap the fully cooled, unfrosted loaf tightly in plastic wrap, then in a layer of foil, and freeze for up to 3 months. Thaw overnight in the fridge, bring to room temperature, then make the cream cheese frosting fresh and pour it over just before serving. The frosting takes five minutes and the result is indistinguishable from freshly baked.

Can I make this without nuts?

Absolutely - simply leave them out. The batter doesn't need any structural adjustment; the nuts are purely textural. If you want to replace the crunch without the nuts, toasted pumpkin seeds or sunflower seeds fold in cleanly and work well for anyone with tree nut allergies.

Why is my carrot cake loaf dense?

Three likely culprits: the flour wasn't sifted, the batter was overmixed after the flour was added, or the oven temperature was too low. Sifting aerates the flour before it hits the wet ingredients - skipping it compacts the starches and produces a heavy, tight loaf. Overmixing builds gluten, which tightens the crumb further. And an oven running 25°F too cool means the leavening activates too slowly to give the loaf its rise. An oven thermometer is a $10 fix that solves the last problem permanently.

Can I turn this into carrot cake muffins?

Yes. Fill a standard 12-cup muffin tin lined with paper liners about two-thirds full and bake at 350°F for 18 to 22 minutes - start checking at 18. The batter, spice blend, and cream cheese frosting all translate directly with no adjustments needed. Pipe or spoon the frosting on top once the muffins are completely cool.

Substitutions and Variations

  • Extra pecans Feel free to add extra pecans into the batter itself if you would like. I recommend about a half cup and add at the same time as the carrots. You can use walnuts instead of pecans.
  • Other nuts: Definitely use pistachios instead, but I love raisins and toasted coconut flakes.
  • Carrot cake spice variations: Add all-spice, cloves, and ginger. If you love warm spiced bakes, the Apple Cinnamon Roll Cake uses the same spice profile and is completely dairy-free.
