Every summer, I impatiently look forward to berry season here in the Northeast-even in Queens, NYC, I'm close to farms bursting with fresh strawberries, blueberries, and blackberries. When the heat kicks in, no-bake desserts are a go-to, but there are also plenty of easy oven treats that come together with minimal effort-I call them "lazy desserts." These are the ones I make on repeat when I want something simple, seasonal, and guaranteed to get people asking for the recipe.

No Bake Strawberry Pie with Cream Cheese
I make this pie when I want something that really shows off fresh strawberries with minimal effort. I love how the silky cream filling balances the fruit-it's simple to put together and always gets attention.

No-Bake Strawberry Lasagna
This is one of my favorites when I need a make-ahead dessert that looks a bit special without using oven. The creamy layers and fresh strawberries hold together beautifully, so every slice comes out neat and ready to serve.

No-Bake Berry Cream Cheese Pie with Thick, Glossy Triple Berry Layer For the topping I use a two-stage berry method-cooking half the berries into a glossy compote, then folding in the rest fresh-so the layers stay clean instead of bleeding together. It's an easy, make-ahead summer dessert that looks bakery-level with very little effort.

I like making this when strawberries are at their peak and I want something warm and comforting. The fresh strawberry topping comes together in the simplest way, and it always disappears fast.

Layers of creamy filling and homemade berry compote create a stunning chilled dessert. It's fresh, colorful, and great for gatherings. I take this one to potlucks all the time.

No-Bake Blueberry Cheesecake
Smooth cheesecake layered with a sweet blueberry topping for a fresh, fruity finish. I made the topping myself but you can also use blueberry pie topping for this dessert. No oven needed, just chill and serve.

Berry Cobbler Cookies These are easy to make since it's a simple sugar cookie and it highlights the tart berries and sweet crumb topping. I like to top them with a scoop of ice cream or peanut butter.
