On most July nights my slow cooker, Instant Pot, and air fryer are doing their thing while I lift weights, stretch, and play with the dog - I sit back with a cold fruit smoothie or a mocktail while they quietly finish dinner. Either way, the plate ends up full of good ingredients, plenty of protein, and none of the mystery stuff hiding in takeout.

There's a very specific kind of summer heat that turns my New York kitchen into a tiny sauna, and I have absolutely no interest in standing over a sputtering pan when it hits. I love cooking, but I don't love feeling like I just finished a workout because I browned some chicken.

So this is what I do instead: I put my small army of kitchen gadgets to work. The slow cooker, the Instant Pot, the air fryer - they all earn their counter space when the temperature climbs. I set them up, drizzle in good olive oil and friends, add real ingredients I can pronounce, then walk away.

Every recipe in this lineup keeps the heat under control and uses the kind of fats and flavors you actually want in your food - olive oil, a little butter where it counts, bright herbs, and spices instead of preservatives. The idea is simple: let the gadgets sweat when you want them to, skip them when you don't, and still sit down to a home-cooked meal that feels a lot better than another round of lukewarm takeout.

When the kitchen feels like a sauna but I still want real dinner, this is the chicken I throw into the slow cooker and walk away from. The thighs stay soft and juicy, the apricot glaze gets glossy all on its own, and all I have to do later is lift the lid and pretend I worked very hard on it.

On nights when I want BBQ but absolutely no smoke or extra heat in the kitchen, these saucy slow cooker thighs step in. They come out sticky, tender, and shredded-meat-ready for sandwiches or bowls, and the only effort on my side is plugging the cooker in.

Slow Cooker Chipotle Honey Chicken (Sweet, Smoky, Taco-Ready Shredded Chicken)
This is my go-to taco chicken when I'm not in the mood to hover over a frying pan. I pile chicken into the slow cooker with chipotle and honey, let it turn soft and smoky while I do literally anything else, then shred and serve with cold toppings straight from the fridge.

If I'm craving takeout but don't want to crank up the stove or wonder what's in the sauce, I make this instead. The slow cooker takes care of the juicy chicken and thick sweet-and-sour sauce, and I still get that glossy, sticky coating without heating up the whole kitchen.

On the days when the idea of deep-frying makes me want to lie on the floor, I make this air fryer fish sandwich instead. The fish goes crispy without turning the kitchen into a fryer station, and the homemade tartar sauce quietly steals the show. I pile everything onto soft buns, add extra pickles, and dinner feels like a diner treat with none of the greasy air or mystery oils from takeout.

I don't crank the oven to roast wings in July, I make these instead. The air fryer turns chicken wings super crisp with way less mess, and I get to keep the kitchen from feeling like a sports bar. I toss them in sauce right at the end, set out a simple platter, and call it "wing night" even though the house barely warmed up.

These meatballs are my answer to "I want something fun, but I refuse to hover over a pan." I put them out with a little salad or some pita on the side and pretend I have my own mezze bar, minus the extra heat.

The result still tastes slow-cooked, but my kitchen doesn't feel like a steam room, and I've got a full pot ready for toppings and leftovers.

Instant Pot Country Style Ribs (Fall-Apart Tender BBQ Pork)
If I want ribs but don't want the oven on or the grill going, I use the Instant Pot. The ribs come out fall-apart tender, drenched in sauce, and I don't have to hover over anything smoking or sizzling. I finish them with a quick broil or just serve as-is, and they taste like proper BBQ without the extra heat and long cook time.

Instant Pot Pork Stroganoff (Creamy, Easy & Ready in 30 Minutes!)
This stroganoff is my way of getting a creamy, comforting bowl of noodles on the table without multiple pans. The Instant Pot handles the pork and sauce together, so I'm not juggling a skillet and a pot while the kitchen gets hotter. I stir in the finishing touches, ladle it over pasta or rice, and it feels like a proper sit-down dinner with very little effort.
