Over the years, sausage has ended up in more of my recipes than almost any other protein - and for a good reason. Sausages are one of humanity's oldest prepared foods, with a history spanning over 4,000 years. Originally invented as a clever way to preserve excess meat using salt and animal intestines, they have evolved into a global culinary staple mentioned in ancient texts.
