What I've learned (after more than a few slightly chaotic cookouts) is that a great July 4th spread is almost never about the main dish alone. Potato sides are usually the first thing I lock in for a July 4th menu because they anchor everything else. They're familiar, filling, and incredibly forgiving when made ahead-exactly what you want when the grill is already doing plenty of work.
