Ingredients for Honey Mustard Pork Chops
- Pork chops: Center cut bone-in pork chops are excellent for this recipe because they are juicy and tender and will maintain their moisture due to the presence of the bone.
- Honey Mustard Sauce: The sauce couldn't be easier - just a mix of honey, garlic, and yellow mustard. Chances are, you probably have most of these ingredients sitting in your fridge!
- Herbs and Seasonings: You'll need garlic powder, salt, and pepper. Prefer to use fresh garlic and herbs at hand? No problem - if you prefer to use fresh herbs, I provide instructions on how to do that.
This recipe works best with a thin-cut boneless loin chop. If you've ever wondered why thickness matters so much for searing, my guide on which pork chop cuts are best for pan searing is worth a quick read

How to make them
Prepare the chops: Season both sides of your pork chops with garlic powder, salt, and pepper.

Sear: Heat the olive oil in a large oven-safe skillet over medium-high heat. Add pork chops and cook on medium high until both sides are golden brown, about 1 to 3 minutes per side.
Make honey mustard sauce: Combine the honey and yellow mustard in a small mixing bowl. Brush the mixture over both sides of the pork chops.

The pork chops are ready to go in the oven!

Bake: Bake the pork chops at 350 F until they reach an internal temperature of 145°F, about 10- 15 minutes.
Garnish: Sprinkle the parsley on top and allow the pork chops to rest for 3 to 5 minutes before serving.

What are substitutions that I can make?
Boneless pork chops - you can use boneless pork chops if you would like, but be sure to watch them so they don't dry out. The bone in the bone-in pork chopsand helps the meat retain its moisture.
Garlic paste or fresh garlic - Instead of the garlic powder, you could also use a garlic paste, but with the powder, you will get a more even coating, and the garlic flavor will not be as overwhelming.
Grapeseed oil - is a great alternative to olive oil, but you can also use pork tallow.
Dijon mustard - to substitute yellow mustard, you can use Dijon mustard instead. Be sure to taste the mixture before you add it to the pork chops, and ensure the mustard is not overwhelming. Add more honey if so, and only use what is needed to cover the pork chops; dispose of the rest.
Fresh herbs - you can use fresh herbs in addition to the garlic powder, such as thyme and rosemary.

Troubleshooting and FAQ
My pork chops stick to the skillet: To keep your pork chops from sticking to your pan, ensure your pan is evenly hot before adding the pork chops, and as tempting as it is, don't move them around a lot. Let them sit and sear before flipping them.
Do I need to flip them before transferring to the oven? No, once you place them in the oven, you do not need to flip them; they will finish cooking as they are.
To prevent dry pork chops: If you do not want your pork chops to become dry, it is best not to overcook them. You can ensure that by using a meat thermometer, and watch that your pork chops reach an internal temperature of 145°F.
So, keep an eye on the cooking time and check it; you don't want to let it run over. Keep in mind that the thickness of your pork chops can affect the cooking time.

How do I add a level of heat?
If you would like to add a layer of heat, you could use hot honey or add red pepper flakes to the honey mustard mix before putting it on the pork chops.
Can I grill them?
Yes, if you would like to make them on the grill, you can. It will add another layer of flavor to the dish. You will want to season and grill your pork chops, baste them with honey mustard, and glaze them at the end as you would if you were using BBQ sauce.
