If you need a dessert that travels well, feeds a crowd, and gets requested every single time - this is it. This No Bake Pineapple Cream Cheese Pie comes together in 20 minutes with only 5 ingredients, chills overnight like a dream, and disappears off the table faster than anything else you'll bring to a potluck this summer.

This No Bake Pineapple Cream Cheese Pie is the easiest, most crowd-pleasing summer dessert you'll make all season - and it requires exactly zero oven time. A buttery graham cracker crust gets filled with a light, silky cream cheese and pineapple filling, then finished with a crunchy crushed graham cracker topping that sets it apart from every other version out there.

It takes just 20 minutes of prep, uses 5 simple ingredients you can keep stocked year-round, and chills beautifully overnight - making it the perfect make-ahead dessert for potlucks, cookouts, or any time you need something impressive without the stress. One bite of that cool, tropical, creamy filling and you'll understand why this pie disappears faster than anything else on the dessert table.

If you love pineapple in your desserts, this No Bake Millionaire Pie is easy to make and also requires minimal amount of ingredients.

It's hard to believe that this delicious no bake dessert requires no baking, but it's true-the dessert assembly is a snap and all you have to do is chill it. Crushed graham crackers top a cream cheese pie filling layer inside a buttery graham cracker crust. The richness of the cream cheese combined with the sweetness of cool whip, served up cold, is a tasty finish to any family dinner!

In the past I've made No Bake Chocolate Dessert, No Bake Lemon Pudding Cream Pie, No Bake Oreo Dessert, and now this NO BAKE Canned Pineapple Dessert. I gotta say, I think no-bake pies are my favorite and this pineapple cream version is definitely in the top 3!

Ingredients You'll Need

  • Cream Cheese: Softened, 8 oz. block of full fat cream cheese
  • Cool Whip: A tub of cool whip, thawed.
  • Canned pineapples: Sliced canned pineapple, drained and chopped
  • Graham Cracker Crust: 8 inch store-bought graham cracker crust
  • Graham crackers: Crushed, for the topping

How to Make No Bake Pineapple Cream Cheese Pie

1. Make the Pineapple/Cream Cheese Filling

  1. Soften cream cheese: You will microwave it in the oven safe dish for 20 seconds. Next, you will move it to a large bow and add a tub of cool whip. Using a rubber spatula, gently mix everything together.
  2. Add Cool Whip: to Softened Cream Cheese and mix well
  3. Add Crushed Pineapples: Chop pineapple into small chunks and add it to the cream cheese/cool whip mixture.

2. Fill the Crust with the Cream Cheese Pineapple Filling

Fill that pie crust all the way to the top with cream cheese/pineapple filling using a spatula to smooth out the top

3. Top with Crushed Graham Crackers

Because we are using crushed graham crackers as the topping our no bake pineapple pie, we will need a zip lock bag and a wooden roller to crush them.

graham crackers and wooden roller before getting crushed

Once you crush your graham crackers, you will have both powdery chunks and more sizable ones. That's exactly what we want. We don't want uniformity - we want a variety of texture!

All that we have left to do is add these crushed graham crackers on top of our pineapple dessert. I used my fingers to spread them over the top. As you can see from the picture below, I didn't put anything on the edges of the pie, but instead kept the crumbs towards the center.

Refrigerate before serving

We want to be able to cut into this delicious dessert easily, which is why I recommend refrigerating it for at least an hour! I also sometimes put it in the freezer for 30 minutes or more, if short on time. That works too!

We just need a cooler temperature to ensure that fats in cool whip and cream cheese solidify again so that we can easily slice our pineapple dessert. It's so much easier to serve it that way!

Tried this recipe and it was so delicious with all the pineapple chunks. Definitely wasn’t any leftovers from my family. Will be making this many more times for dessert!

Using Tid-bits would work great. Smaller than chunks and about the size of the chopped rings in the photo. I just happen to have a can in my cluttered pantry, so after lunch I am going to make this pie.
Thanks for the idea. Bet this would also be great with can cherries. Not pie filling, but whole cherries in a can you can chop.

Sounds delicious. I would use a can of pineapple chunks (drained) to make it even easier.
